eggs over protein waffles with cheese and canadian bacon

Numbers will vary depending on type of cheese, bacon, and protein powder used. I used Chobani nonfat Greek yogurt, Quest protein powder, Kraft American cheese, and Godshall's uncured Canadian Bacon.

Waffle ingredients

  • 50gm nonfat greek yogurt

  • 50gm mashed banana

  • 30gm liquid egg whites

  • 20gm oats ground to flour

  • 20gm vanilla protein powder

  • dash cinnamon

  • pinch baking powder

  • few drops vanilla and/or maple extract

Other ingredients:

  • 2 slices canadian bacon (or ham)

  • 1 slice american cheese

  • 2 eggs

waffle directions:

Mix liquid ingredients together then add in dry ingredients. Mix and heat mini-waffle maker.  Cook according to waffle maker instructions. Optional, make mini pancakes. Then proceed to assemble.

assembly instructions:

  1. prepare waffles

  2. top 2 waffles with 1/2 slice of american cheese

  3. fry 2 slices of canadian bacon in pan and add one to each waffle

  4. fry 2 eggs to liking and add one to each waffle.

  5. salt, pepper, and enjoy!
